"I joined The Providores at the very beginning, when we opened in August 2001, and I'm the longest-serving member of the team. I travelled around Australia for a year after finishing my law degree, then when I returned to the UK, a friend introduced me to Peter and Michael. I started as a waiter, and then was a duty manager before becoming Manager in 2008.
In addition to leading the Front of House team, I work closely with Michael on Providores Out, our catering arm.
We're passionate about giving our guests the best possible dining experience, and as someone who loves dealing with people and delivering great service, this is a role that I relish."
Favourite dish on the menu: Smoked coconut, tamarind and liquorice laksa with a chicken-lime leaf dumpling, green tea noodles, a soft boiled Quail's egg, crispy shallots and coriander (currently on The Providores dinner menu).
